Healthy eating is not something that happens to me very often. Of course I make the afford every so often and watch what I eat. This day came today. For my lunch I had very healthy tomato, avocado and mozzarella salad.

You fancy one? Here is a recipe:
You need
- 2 ripe beef steak tomatoes
- 100g mozzarella cheese
- 2 avocados
- few fresh basil leaves (I used a bit of parsley as I run out of basil)
- 20 black olives
- fresh crusty bread, to serve
- salt and pepper
Cut tomatoes into thick wedges and place in a large dish. Drain mozzarella cheese and roughly tear into peaces. Cut avocados into slices and mix all together. Add salt and pepper. Scatter the basil and olives over the top and serve with crusty bread.
